Creatures with regeneration have the ability to regain hit points at the start of their turns. They only die if they start their next turn with 0 hit points. I’ve quoted the text from the troll stat block below:
Regeneration.
The troll regains 10 hit points at the start of its turn. If the troll takes acid or fire damage, this trait doesn’t function at the start of the troll’s next turn. The troll dies only if it starts its turn with 0 hit points and doesn’t regenerate.
DnD 5e Basic Rules
Typically, a specific type of damage (e.g. fire, acid, radiant, etc.) is required to prevent the creature from regenerating and actually kill it. It is entirely possible that a party of adventurers may either lack the ability to deal the damage needed. They also might just not figure out what they need to do. This can lead to a pretty dramatic fight where they party is forced to flee. They’ll need to hit the books to better understand the creature they are fighting.
As for the monsters, I think they might just get scared when they stop regenerating. Maybe it’s the first time they’ve actually been hurt. I’d bet they’d run away…or be driven mad with rage.
